Harvested by local fishing guilds from one of Portugal's most iconic estuaries, renowned for its rich waters and long-standing tradition. They arrive incredibly fresh and are purified in authentic seawater until all the sand is removed. Then, they are cooked and hand-packed, just as tradition dictates.
