Galician Cockels from Noia in Brine

Each can puts the truth front and center: the exact species, origin, method of capture… These cockles are Cerastoderma edule, the most prized species worldwide for its exceptional flavor and quality, enhanced by the rich waters of our Rías, one of the planet’s largest phytoplankton reserves. Hand collected by the Cofradía de Noia, a local guild of shellfish gatherers, under strict controls to preserve the resource, then cleaned and carefully hand packed with purified water from one of its most iconic Rías.
