Ensis Magnus has a more tender meat compared to others. It naturally inhabits our Rías, where its unique flavor is enhanced by the richness of these waters. They are hand collected: by divers at high tide and on foot at low tide. They also undergo a delicate purification process in the very same water of the Ría.
